Basic fried rice is a dish Aviva will prepare and have hot on the table within 5 minutes. This is a favourite basic recipe for fried rice our kids love and is great for finishing off any left-over rice. Fried rice is a take away favorite, however it’s also quick and easy to make at home. It’s a great way to use up leftover rice (already cooked, cold rice makes the best fried rice) and transform boring leftovers into an entirely new dish. The next time you’re making rice, just make extra and put the extra in the fridge. After that, you’ll be able to make a healthy, delicious, quick fried rice dinner in no time.

Easy homemade Chinese egg fried rice

This is Aviva’s basic recipe for egg fried rice that you can mix up if you want. Medium or long grained white rice works best, no that small round stuff! Serve it as a main dish or a dish with your favourite barbecued pork, chicken, or shrimp. Once you have this basic recipe mastered, you can feel free to adjust it to suit your needs and taste.

Ingredients for Basic Chinese Fried Rice

  • 1 to 2 green onions, chopped
  • 2 large eggs (more if you like it eggy)
  • Freshly ground pepper, to taste
  • 1 teaspoon salt (it really tastes better with salt)
  • 3 tablespoons oil, divided
  • 4 cups cooked rice, cooled
  • 1 to 2 tablespoons light soy sauce (or oyster sauce)

Now Let’s Make Egg Fried Rice

  • Lightly beat the eggs with the pepper and salt.
  • Heat a wok or frying pan over medium to high heat and add 1 tablespoon of the oil. When the oil is hot, add the eggs and then cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.
  • Add the remaining 2 tablespoons of oil. Add the cooked and cooled leftover rice. Stir-fry for a few minutes, using a wooden spoon to break it apart. You will need to push and smash it a bit to break it up. Stir in the soy sauce or oyster sauce as desired.
  • The trick is to keep it moving, so stir, stir, and keep stirring. When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly, then stir in the green onions. Serve hot.

Aviva’s Pro Tip

If you want to add more left overs to bulk up this dish, make sure you add more eggs. This will keep the ratio of eggs to rice well balanced.
